These perfectly slow cooked cranberry chicken breasts are cooked in a slightly sweet and tart sauce. It’s easy to prepare with less than 10 ingredients, and an excellent meal idea for busy nights.

Even though they are in their peak season from October through December, you can now buy fresh tasting frozen cranberries any time of year, thanks to Cape Cod Select! I received two bags of delicious frozen cranberries at my front door and they were completely frozen when they arrived. When I opened one of the bags, I was pleasantly surprised to find frozen plump berries that looked incredibly fresh! If you love cranberries, you have to give these a try. You can find them at your favorite food store or you can order them online.
Back to the recipe. . . who doesn’t love their slow cooker this time of year? I know I do, especially when the recipe is as easy to make as this one is. All you have to do is brown the chicken, add the ingredients to the slow cooker and come back 5 hours later to a healthy tasty dinner.
This recipe was inspired by a dish my mom used to make with a packaged cranberry fruit sauce that had a lot of added sugar. This is a more wholesome fresh version that smells heavenly as it cooks away. Serve it over a bed of brown rice or farro with a side salad for a filling and healthy dinner.
- ¾ pound boneless skinless chicken breasts
- 1 clove of garlic - crushed
- 1 tablespoon maple syrup or honey
- 1½ cups Cape Cod Select Premium Frozen Cranberries coarsely chopped
- ½ cup of chopped orange or clementine
- 1 teaspoon fresh grated ginger
- 1½ tablespoons balsamic vinegar
- 1 teaspoon tamari sauce
- ¼ cup fresh squeezed orange juice
- brown chicken breasts in a pan
- place browned chicken breasts in a slow cooker along with remaining ingredients
- cook in slow cooker for 5 hours on low heat
