Since traditional caramel is less than healthy, I cleaned up this recipe by using medjool dates in place of sugary caramel. Unlike those little caramel candies that contain corn syrup, refined sugar and other suspect ingredients, medjool dates are naturally sweet and are an excellent fill-in when it comes to substituting sugars and butters in recipes for sweets – especially caramel. All you need is a food processor to make this amazing caramel.
Medjool dates are loaded with fiber and they are naturally sweet, containing 4.5 grams of sugar per date. They are an excellent source of potassium, copper, magnesium, selenium and vitamins. So why not use dates as a chewy sweet caramel and toss those candy caramel squares to the curb? Trust me your taste buds will not know the difference.
