Slices of cucumber topped with goat cheese and figs – a tasty small bite that is light and refreshing.
This is the time of year for warm weather parties ~ showers, graduations, barbecues, or a relaxing day spent at the beach. Small bites of food are fun and just perfect for these types of gatherings. They are easy to transport and even easier to just pop in your mouth. And that’s what this month’s recipe redux theme is all about. . .

The small bites that I am sharing hardly need a recipe, they are more like cheese and cucumbers instead of cheese and crackers. Cucumbers are not only more flavorful than most crackers, they are good for you too. So why not ditch the cracker and top a cucumber with goat cheese and dried figs?
- 1 cucumber
- approximately 6 tablespoons goat cheese
- 6 to 8 dried figs
- Slice the cucumber in to ¼ inch thick rounds
- top each cucumber slice with ½ to 1 teaspoon of goat cheese
- slice the figs and place on top of the goat cheese.
