Garden chopped salad made with fresh vegetables ~ the flavors of summer mixed together into bite-sized pieces in one bowl.
I don’t know why, but I love chopping vegetables – I find it very relaxing. It’s a good thing because I also love fresh salad ingredients chopped up into tiny pieces. A chopped salad is almost like a salad bar in a bowl; each bite of salad is a tasty combination of flavors going on in your mouth all at once. When I make a chopped salad, I begin with basic ingredients such as chopped romaine, cucumbers, cabbage, onions, tomatoes.
Once I have the basic ingredients all together, I head to the fridge to see what else I can chop up and toss in that salad bowl. The possibilities are endless. Broccoli, carrots, cauliflower, zucchini, peppers, avocados, olives, beans, dried fruit, hard boiled egg. . . I’m sure you get the idea!
Once it’s all together, I lightly top the salad with a simple lemon vinaigrette dressing so the flavors of the salad shine through. Add some grilled chicken or tofu and you have a light, healthy and quick summer supper.
Here are the ingredients that I used in this salad, what are your favorite salad ingredients?
- 1 head romaine lettuce
- 1 pint cherry tomatoes or two tomatoes
- 1 small to medium onion
- 1 cucumber
- 2 carrots
- ½ cup kalamata olives
- 1 small wedge purple cabbage (makes about 1 cup)
- 1 avocado
- ¼ cup lemon juice
- ½ cup olive oil
- 2 cloves of garlic
- Chop all of the ingredients into bite-sized pieces and mix together
- Combine dressing ingredients and whisk or shake well lightly top salad and serve remainder on the side
