Gingery and slightly sweet, these gluten-free gingerbread cookies are sure to be a hit this holiday season.
It’s officially the holidays and that means it’s cookie season too! Cookies are my absolute favorite way to eat dessert so I was excited when I heard about the 12 days of cookies which is being hosted by Family Around the Table and Cooking With Carlee. Over the next 12 days my blogging friends and I will be filling the season with all kinds of delicious cookies.
First up on the list are these gluten-free gingerbread cookies. They are naturally sweetened with coconut sugar and made with almond meal instead of wheat flour. Unlike the traditional gingerbread cookies, these are made without molasses to keep the sugar down. If you like a sweeter cookie, you can add up to 1/4 cup more of coconut sugar.
I like to use almond flour in gluten-free cookies and cakes, because it’s made with real honest to goodness almonds. Many of the gluten-free flour mixes have suspect ingredients like Xanthan Gum and white rice flour which is higher in carbs and has very little fiber. The almond flour makes these cookies moist, and I doubt that you will miss the wheat flour. The dough can refrigerated and rolled for a cookie cutter, or just shaped into cookies like I’ve done. They are super easy to make and they taste great!
- 3 cups almond meal/flour
- ¼ cup ground flaxseeds
- 2 teaspoons ground ginger
- 1½ teaspoons cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon baking soda
- ¼ teaspoon sea salt
- ¾ cup coconut sugar
- ¼ cup coconut oil melted
- 1 egg
- 1 teaspoon vanilla
- preheat the oven to 350 and line two pans with parchment paper
- In a large bowl blend the almond flour. flaxseedmeal, cinnamon, nutmeg, baking soda and salt
- In a separate bowl combine the coconut sugar, coconut oil,egg and add to the flour mixture and combine well
- shape the dough into ¾ inch balls and place on a baking sheet gently press down on the cookies to flatten them (a glass works well for this).
- bake for 12 to 15 minutes
