How To Make Zucchini Rolls
If you are using homemade guacamole, make the guacamole and set it aside.
STEP 1: Use a vegetable peeler or sharp knife to thinly slice into thin zucchini strips.
STEP 2: Use a butter knife or offset spatula to spread the guacamole the zucchini ribbons.
STEP 3: Use your hands to roll the sliced zucchini covered with guacamole to roll them up.
STEP 4: Garnish the zucchini roll-ups with pieces of chopped tomatoes, pickles, or olives.
Add a pinch or two of sea salt, black pepper, or fresh herbs to taste (optional).
Note: The easiest way to achieve nice thin zucchini slices is to use a vegetable peeler like this one or a mandolin slicer and carefully slice down the length of the zucchini.
