It’s fall, and the perfect time of year to sink your teeth into this apple & fig flatbread with goat cheese.
As apple week continues, I’m sharing one of my favorite fall recipes – apple & fig flatbread with goat cheese. It’s filled with fresh seasonal ingredients. It’s sweet, savory and peppery all in one bite. Perfect for a game day snack or a quick dinner.
Aside from making your own dough, which is optional, this apple & fig flatbread with goat cheese can be put together in minutes. I usually make my own dough, but you can use pre-made dough or flatbreads. Once the dough is ready to go, smear some arugula pesto over it, and top it with thinly sliced apples, fresh figs, sprinkle with goat cheese and bake.
Once the flatbread is heated through and the apples and figs become soft, remove from the oven, sprinkle with baby arugula and enjoy! Here’s how you make them. . .
- 2 to 3 apples sliced thin
- 3 fresh figs cut into quarters
- 2 tablespoons arugula pestoor your favorite pesto
- 3 to 4 ounces goat cheese
- a few handfuls of baby arugula
- Spread pesto over flatbread
- Top with apples and figs
- Sprinkle with crumbles of cheese
- Bake at 425 until cooked through - 8 to 10 minutes for pre-made crust or 15 -18 for a unbaked crust
- Top with baby arugula
