- Rolled Oats – I use old fashioned rolled oats and blitz them in a blender to make oat flour or you can buy pre-made oat flour
- Eggs
- Apples – MacInstosh, Gala or Fuji are my first choice but any type of apple will work. Shred them or chop them if you like more texture
- Walnuts or pecans for texture and protein

- Prepare the ingredients; chop or grate the apples, and blend the rolled oats in a high speed blender
- Add the oat flour to a mixing bowl along with the other dry ingredients
- Add the egg, milk and vanilla to the mixing bowl
- Stir in the apples

- 2 cups of old fashioned rolled oats or 1 1/2 cups oat flour
- 1 large or 2 small apples chopped or grated
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/2 teaspoon sea salt
- 1 egg
- 1 1/4 cups milk
- 1 teaspoon vanilla
Instructions
- Prepare the Ingredients: Chop or grate the apples, Place 2 cups of rolled oats into a high speed blender or food process and process them until they turn into the texture of flour. (if you are using packaged oat flour skip this step).
- Add the 1 1/2 cups oat flour to a mixing bowl along with the 1/2 teaspoon baking powder, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg and combine.
- In a separate bowl add the egg, 1 1/4 cup milk and 1 teaspoon of vanilla and whisk with a fork or whisk until all of the ingredients are mixed together.
- Add the dry ingredients and mix, add the apples and stir until all ingredients are combined
- Heat a skillet or griddle over medium heat, pour the batter in approximately 1/3 cup portions onto the pan
- cook for 2 to 3 minutes until the pancakes start to bubble on the sides, and flip cook for 2 to 3 minutes longer
