Apple oatmeal pancakes are a healthy, gluten free breakfast idea





  1. Prepare the Ingredients:  Chop or grate the apples, Place 2 cups of rolled oats into a high speed blender or food process and process them until they turn into the texture of flour. (if you are using packaged oat flour skip this step). 
  2. Add the 1 1/2 cups oat flour to a mixing bowl along with the 1/2 teaspoon baking powder, 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg and combine.
  3. In a separate bowl add the egg, 1 1/4 cup milk and  1 teaspoon of vanilla and whisk with a fork or whisk until all of the ingredients are mixed together.
  4. Add the dry ingredients and mix, add the apples and stir  until all ingredients are combined
  5. Heat a skillet or griddle over medium heat, pour the batter in approximately 1/3 cup portions onto the pan
  6. cook for 2 to 3 minutes until the pancakes start to bubble on the sides, and flip cook for 2 to 3 minutes longer
