Spicy baby arugula, grape tomatoes, creamy avocado and quinoa tossed in a slightly sweet lemon vinaigrette, a refreshing salad to say the least.
I just love salads, the possibilities are endless when it comes to mixing them up. I had a salad similar to this at a local farmer’s market not too long ago and I had to re-create it at home. The slightly peppery arugula along with the sweet lemony dressing really makes this salad a star. The ingredients are so simple, yet so deliciously flavorful.
The quinoa adds protein to make it filling enough for a meal, so make up a big bowl and enjoy!
- THE SALAD
- 4 to 5 ounces of baby arugula
- 1 avocado cubed
- 1 cup halved grape or cherry tomatoes
- 1 cup red quinoa
- THE DRESSING
- 4 ounces extra virgin olive oil
- 2 ounces fresh lemon juice
- 1 clove crushed garlic
- 1½ teaspoons maple syrup
- Place the salad ingredients into a bowl
- mix up the dressing and set aside
- gently toss with the dressing just before serving
