Asian Chicken Salad with Pasta & Spinach

A flavorful combination of ingredients are tossed in an Asian dressing.




  • 1 1/2 cups of shredded chicken or 3/4 pound boneless chicken breasts cooked and shredded
  • 6 ounces whole wheat pasta – rotini, shells, bow, penne or cellentani
  • 4 diced green onions
  • 5 to 6 ounces of baby spinach rough chopped
  • 1 1/2 teaspoons toasted sesame seeds



  1. Cook the pasta according to package directions
  2. While pasta is cooking combine the dressing ingredients ( 2 T tamari, 2 T sesame oil, 2 T vinegar, 3T olive oil, 2 t of honey 1/2 t ground ginger) in a small jar and shake well, or add the ingredients to a small bowl and whisk with a fork
  3. Place the cooked and drained pasta into a bowl, add the chicken, onions and spinach; mix together
  4. Pour dressing over salad, sprinkle with sesame seeds and serve


If you are making this ahead of time, add dressing just before serving
