This healthy baked falafel is vegan, gluten free and it will tempt your tastebuds.

This month is The Recipe Redux birthday month, and to celebrate we are choosing a fellow ReDuxer’s blog and making one of their recipes. I selected the blog Joy Food Sunshine because the name caught my attention, it’s such a happy name, isn’t it? Joy. Food. Sunshine. Those words just make me smile. When I started looking at Laura’s recipes and I wanted to make every single one of them! She seems to have the same philosophy of food as I do – healthy, simple and delicious. I’ve pinned a few of her recipes to try soon like these Vegan Peanut Butter Black Bean Brownies, Flourless Chocolate Truffle Cake and No Bake Coconut Almond Bars.
Now for the recipe. . . I love falafel, the chickpeas, the spices and everything else about it. Chickpeas are an excellent source of protein and fiber which makes the falafel filling. They are an excellent option for a vegetarian meal. This recipe is super easy to make in a food processor which, by the way is the best gadget ever.
Once all of the ingredients are blended they are baked, not fried into golden delicious falafel bites. They can be easily frozen which is just perfect for a quick bite when you are in a hurry. You can serve the falafel plain, wrapped in a pita with tzatziki Sauce, or in a salad. Here is Laura’s recipe for Baked Falafel and mine is below. I made a few minor changes – I cut back on salt and used baking soda (less of it) in place of baking powder.
- 2 cups chickpeas
- ½ cup diced white onion
- 1 cup fresh parsley
- 1 cup fresh cilantro
- 2 cloves garlic diced
- ½ teaspoon sea salt
- 1 teaspoon Coriander
- 2 teaspoons Ground Cumin
- ¼ teaspoon baking soda
- 2 tablespoons Ground Flax Seed
- 1 tablespoon Olive Oil
- preheat oven to 400
- place chickpeas, onions, garlic, parsely and cilantro to food processor and process until well combined
- add the coriander, cumin, sea salt, baking soda, and flax seed and process until well mixed into a fine texture
- line a baking sheet with parchment paper and smear the olive oil onto the paper
- roll falafel into 2 inch balls and place on baking sheet, gently press down to form them into patties
- bake for 15 minutes, flip them over and bake for another 10 minutes until golden.
