Chicken with red wine and tomatoes is pressure cooked to perfection. It’s full of flavor and ready to eat within a half an hour.
1 pound boneless chicken breasts
2 cups diced tomatoes
1 1/2 cups sliced carrots
1 medium onion, chopped
3 to 4 cloves of chopped fresh garlic
1/2 cup red wine
2 tablespoons herbs de provence
1/4 teaspoon sea salt
Place chicken breasts into Power Quick Pot and top with remaining ingredients
Set the Power Quick Pot to chicken and set time to 10 minutes
Once chicken has completed cooking slowly release pressure and allow to sit for 5 minutes more
Serve this over your favorite whole grain.
Note: The sauce will be thin, if you prefer a thicker sauce add 1 teaspoon of flour to 1 tablespoon of water and gradually stir into the sauce until it reaches desired thickness
