Dried figs are dipped in dark chocolate and pistachios. It’s a simple combination yet the¬†sweetness of the figs combined with the bitterness of the dark chocolate and a touch of saltiness from the pistachios is the perfect balances of sweet, salty and crunchy.

1 3.5 ounce chocolate bar 60% or higher cocoa

1 tablespoon coconut oil

10 to 12 dried figs, any type of fig will work

1/4 cup chopped toasted pistachios

Line a cutting board or baking sheet with parchment paper

Add about an inch of water to a saucepan and bring to a simmer

Break the chocolate bar into pieces and place into a heatproof bowl that will fit on top of the saucepan

Place the bowl with chocolate over the simmering water and stir occasionally as the chocolate begins to soften, add the coconut oil and stir until most of the chocolate has melted

Remove from heat, the chocolate will continue to melt

Use a food processor or sharp knife to chop the pistachios into small pieces and place into a small bowl

Using the stem of the fig dip them one by one into the chocolate and then the pistachios

Place them onto the parchment lined board allow the chocolate to harden about an hour

Store at room temperature
