Hearty Vegetable Chili

Ingredients
  • 1½ cups chopped zucchini
  • 3 cups chopped portobello mushrooms
  • 1 cup diced onion
  • 2 cloves diced garlic
  • 1 yellow or red bell pepper chopped
  • 1 green pepper chopped
  • 1 jalapeno pepper chopped
  • 2 cups chopped tomatoes
  • 1½ cups chopped tomatillos
  • 3 tablespoons chili powder
  • 2 teaspoons ground cumin
  • ¼ cup water
  • 1½ cups black beans
  • 1½ cups kidney beans or white beans
  • 1 cup cooked quinoa
  • Juice of one lime
  • ½ cup chopped fresh cilantro
  • Garnishes: Chopped onions, avocados, cheese, guacamole, Greek yogurt
Instructions
  1. place first 12 ingredients into a slow cooker and cook on low for 2½ hours
  2. add the quinoa and beans and cook for an hour longer
  3. garnish and serve
