Grilled chicken Parmesan is a lighter version of a classic dish. It’s made with grilled boneless chicken breasts, fresh tomatoes, basil and mozzarella cheese for a flavorful and lighter twist on classic chicken Parmesan.
1 tablespoon balsamic vinegar
2 tablespoons olive oil
1/2 teaspoon dried oregano
1 pound chicken cutlets or boneless chicken breasts sliced thin
2 cups diced tomatoes (about 3 to 4 plum or medium tomatoes)
2 cloves of garlic divided
1 handful of fresh basil
1/2 cup grated fresh mozzarella cheese
To ensure even cooking time of the chicken, make sure that the chicken breasts are an even thickness by using a meat tenderizer to pound them out.
Change it up – brush fresh pesto sauce on the chicken instead of marinating it.
