Grilled Chicken Parmesan

Grilled chicken Parmesan is a lighter version of a  classic dish.  It’s made with grilled boneless chicken breasts, fresh tomatoes, basil and mozzarella cheese for a flavorful and lighter twist on classic chicken Parmesan.

Ingredients

The Marinade

1 tablespoon balsamic vinegar

2 tablespoons olive oil

1/2 teaspoon dried oregano

1 pound chicken cutlets or boneless chicken breasts sliced thin

2 cups diced tomatoes (about 3 to 4 plum or medium tomatoes)

2 cloves of garlic divided

1 handful of fresh basil

1/2 cup grated fresh mozzarella cheese

Instructions

Prepare 

  1. Mix the marinade ingredients (1 tablespoon balsamic vinegar, 1 clove of crushed garlic, 2 tablespoons olive oil) together in a bowl
  2. Place the chicken into the bowl with the marinade
  3. Pre-heat the grill
  4. Chop the tomatoes, garlic and basil, grate the cheese

Make it

  1. Remove the chicken breasts from the marinade and discard the marinade
  2. Place the chicken breasts onto the grill and cook for about 7 minutes and flip
  3. Cook for 4 minutes more and top with the tomatoes  and sprinkle with cheese.  Cover the grill and allow to cook for 3 to 5 minutes more until chicken is cooked through (internal temp 165) and cheese has melted.

Notes

To ensure even cooking time of the chicken, make sure that the chicken breasts are an even thickness by using a meat tenderizer to pound them out.

Change it up – brush fresh pesto sauce on the chicken instead of marinating it.
