Healthy Buckeye Peanut Butter Balls

Healthier buckeye peanut butter balls are riff on a classic holiday treat. They are made with 5 simple ingredients and they are naturally sweet.




  1. Add the peanut butter and almond flour to a mixing bowl and blend
  2. Stir in the maple syrup and mix well, the mixture will be similar to a cookie dough in texture
  3. Roll the peanut butter mixture into balls and place on a parchment lined cutting board or baking sheet
  4. Place rolled peanut butter balls into the refrigerator for 45 minutes to an hour or in the freezer for 20 to 30 minutes
  5. Melt the chocolate in the microwave or on top of the stove
  6. Use a tooth pick to dip the chilled peanut butter balls into the melted chocolate covering about 2/3 of the ball and place them back to the parchment paper
  7. Allow the chocolate to harden, then remove the buckeye balls to a container and store them in the refrigerator 
  8. Once all of the peanut butter balls have been coated
