Cookies for breakfast? Well yes, when they are filled with nutritious Quaker Old Fashioned Rolled Oats.
Oats are so good for us, they are a nutritious whole grain that breaks down into slowly absorbed glucose to give you long lasting energy, and that’s the best kind of energy. So why not load up your breakfast with nutritious Quaker Old-Fashioned Oats in a breakfast cookie?
Don’t these cookies look absolutely delicious? They are thick and hearty almost like a bowl of oatmeal that is baked into an oversized cookie. Every time I make them, they disappear real fast, and I suspect some are even eaten as dessert.

I enjoy making no bake chocolate peanut butter cookies with oats. The whole family loves them and they are super easy to make.
We are huge fans of baked oatmeal!
In cookies with chocolate chips!
Umm, cookies for breakfast?! You’ve managed to make my mornings magical with this yummy recipe. Can’t wait to whip up a batch tonight!!
I love a good bowl of regular oatmeal with a fried egg on top, but usually our rolled oats are ground into oat “flour” for baking!
Our favorite way to eat Quaker Oats is the Vanishing Oatmeal Raisin cookies I got off the canister years ago!
Oatmeal cookies are so good!
We’re a big fan of classic oatmeal raisin cookies!
These look like such a treat for the time around Easter. Looking at the list of ingredients here, it seems like they are good for me as well! I need to bookmark this!
They are good for you! And they taste good too.
Cookies for breakfast?! That taste like carrot cake? Yes please!!!
Perfect cookies and great combo!
Thank you!
I am all for cookies for breakfast!! Sign me up! These looks so delicious and easy that I can see them on my breakfast table every weekend! I can’t wait to make them.
Thanks- enjoy!
You had my attention when you put the words breakfast and cookie together. These cookies look amazing, and carrot cake is my husbands favorite. We are definitely trying these. I think they’re perfect because I can make a big batch on the weekend, and we can grab them for breakfast during the week. My children will be ecstatic that they get to eat cookies for breakfast.
Thanks Patti! I hope you enjoy them.
Talk about being jam-packed with nutrition. I am so doggone bored with our breakfasts but your oatmeal cookies have carrots and cinnamon in them to boot. That would certainly activate the old tastebuds. I’ll be making them soon.
It’s funny – I still have trouble wrapping my mind around “breakfast cookie” – but I’m fine with muffins! And I look at these, and they’re kind of chewy muffins… I may just need to try these for the family!
They are just like chewy muffins!
Cookies? For breakfast?! Girl I’m so there for this! This sounds like the perfect (and only) way to start one’s morning.
Yes they are Clarie!
I would gladly have a couple for breakfast — and bring some more in the office for my team. 🙂 Skipping the buns for tomorrow’s meeting for these babies! A great way to kick-off our week. 🙂
Thank you!
Perhaps if I mad these breakfast cookies my daughter wouldn’t give me such a hard time about eating in the morning! Lol! Honey is the only sweetener we can have…perhaps I can sub out the coconut sugar for 1/4 cup of honey??? I think I’ll give it a try!
Yes, you can use honey in place of coconut sugar. Enjoy!
I love the combination of oats, carrots, and a bit of cinnamon – these sound like the perfect thing to make with my preschooler for his afternoon snacks! We always have rolled oats on hand – we go through what feels like pounds of them for his breakfast already, haha!
It’s a healthy snack that doesn’t taste like it is!
I’m a HUGE fan of regular oatmeal cookies so I know these carrot-filled breakfast cookies will be perfect for quick mornings. I can imagine enjoying them with a cup of hot pumpkin-spiced coffee in the fall and winter!
Thanks they don’t last long when I make them!
These sound delicious! I love oatmeal and love anything carrot this time of year especially.
Love this idea! We have oatmeal every weekday but these cookies would go down well too I’m sure.
I love that you snuck a vegetable into a breakfast!
I LOVE cookies for breakfast. And these look so perfectly delicious. I can’t wait to try them.
