A wholesome and healthy breakfast cookie that’s full of fiber and protein




  1. pre-heat oven to 350
  2. mix together the almond flour, ground ginger, ground cinnamon, ground nutmeg, baking soda and sea salt in a small bowl and set aside
  3. in a separate bowl, add the coconut sugar, almond butter, and mashed banana – using an electric mixer, mix at medium speed until all ingredients are blended
  4. blend in the egg and vanilla
  5. add the flour/spice mixture and blend well
  6. next, using a spoon stir in the carrots, raisins, walnuts, and oats
  7. using an ice cream scoop – place mounds of cookie dough onto a baking sheet that’s been lined with parchment paper, press down
  8. bake for 15 minutes
