I’m joining the nice cream party a little late. I’ve heard about it but couldn’t imagine a frozen banana tasting like ice cream. Well, I’m here to say that it does, and it’s my new favorite dessert. Thanks to this book, Beautiful Smoothie Bowls.
It’s Recipe Redux time again, and we are celebrating the end of another year by grabbing a cookbook and making a recipe from page 2017 or any combination of 2 0 1 7. I have a lot of cookbooks but I couldn’t find a single recipe that inspired me until I saw this recipe for Purple Cow Nice Cream.
Nice cream is not only better for you than traditional ice cream, it’s so much easier to make. All that needs to be done is to add a few simple ingredients to a blender or food processor and blend it up. In a few minutes, you have a tasty bowl of nice cream that tastes like ice cream and it’s ready to eat.
Raspberry Nice Cream
I used red raspberries instead of black raspberries, but any type of frozen berry will work. This recipe can easily be made dairy free or vegan by leaving out the yogurt or substituting it for a non-dairy yogurt such as soy or coconut yogurt. Here’s how you make this bowl of deliciousness….
- 1 frozen banana sliced
- 1½ cups frozen red raspberries
- ¼ cup coconut milk
- ¼ cup plain yogurt (milk, coconut, or soy)
- Top with your favorite garnish
- Place all ingredients in a blender or food processor and blend until smooth
- Place into a bowl and top with your favorite garnish
