You are going to love this recipe for roasted butternut squash and apples. It’s a little bit sweet, and a little bit tart and it’s is the perfect side dish for the holidays.
I can’t believe it’s the last day of #appleweek! I hope you enjoyed all of the apple goodness this week. Just because the week is over, it doesn’t mean the end of apple recipes from me, I will have plenty more because I love apples!
I also love roasting vegetables, it has to be one of the easiest and tastiest ways to cook vegetables, and when you add some fruit to the mix, well, that’s even better! Butternut squash is one of my favorites to roast, once it starts to turn brown around the edges and gets slightly crispy on the outside, you know it’s going to melt in your mouth. Pair that sweetness with the tartness of Granny Smith apples and crispy sage, yum!
Roasted Butternut Squash and Apples
It really is easy to make this dish, especially if you can find butternut squash that’s already chopped. And these Casabella scissors made cutting up the sage a real breeze. Roasted Butternut Squash and Apples is a side dish that I could easily eat all by itself for dinner, but it also pairs well with roasted pork or chicken. Here’s how you make it. . .
- 1 medium butternut squash cut into 1-inch pieces
- 3 Granny Smith Apples cut into 1-inch pieces
- 2 tablespoons olive oil
- 1 clove minced garlic
- 2 tablespoons fresh sage cut into ribbons
- ½ teaspoon of cinnamon
- Preheat the oven to 400
- Line a baking sheet with parchment paper
- Place the Squash, apples, garlic, cinnamon in a single layer on the baking sheet
- Add the oil and mix well
- Place in the oven and bake 25 minutes until lightly browned and tender
