Sausage and Kale Soup In the Pressure Cooker

  1. On the saute setting, brown the sausage
  2. Once the sausage starts to brown, add the carrots, garlic and onions
  3. Press the cancel button and add the broth and pasta
  4. Cover the pressure cooker and set to pressure to medium and cook time to 8 minutes
  5. Once the soup has cooked, quick release the pressure and add the kale and beans
  6. Cover and allow the soup to sit on warm until kale wilts and beans are heated through

Sausage and Kale Soup Stove-Top Method

  1. Heat a large saucepan over medium heat.
  2. Once the pan is hot, add the sausage and brown it.  Once it begins to turn brown, add the onions, garlic and carrots, and cook until they begin to soften
  3.  Add the broth and pasta and cook for about 10 minutes
  4. Stir in the Kale and beans, reduce heat to low and cover Simmer for 15 minutes and serve

Notes

  1. Vegetable broth can be used in place of chicken broth
  2. Kale can be substituted with an equal amount of baby spinach or escarole
  3. Sprinkle sausage and kale soup  with fresh grated Parmesan cheese just before serving
  4. Use gluten-free pasta to make this recipe gluten-free
