Slow Cooker Method

  1. place the peppers, garlic, onions, and potatoes into a slow cooker
  2. top the vegetables with chicken
  3. pour tomatoes and broth over the top
  4. add the spices
  5. cover and cook on low for 4 to 5 hours
  6. Add fresh lime juice from one lime and sprinkle with fresh cilantro

Oven Method

  1. Add 1 tablespoon oil to skillet and heat over medium heat
  2. Add the chicken and brown
  3. Add the vegetables and cook for about three minutes
  4. Stir in the broth, tomatoes and spices
  5. Cook in 350 oven for 45 minutes to an hour
