Chicken Picadillo

Chicken Picadillo is a quick and healthy dish that is full of flavor



  • 1 tablespoon olive oil
  • 1 pound ground chicken breast
  • bell pepper, diced
  • 2 cloves garlic, chopped
  • 1 small onion, diced
  • 1 tablespoon adobo sauce
  • 2 tablespoons apple cider vinegar
  • 1/4 cup raisins
  • 1/4 cup sliced green olives
  • 1/4 teaspoon coriander
  • 1/4 teaspoon ground cumin
  • 2 tablespoons fresh oregano or 2 teaspoons dried
  • 1 1/2 cups low sodium or fresh diced tomatoes
  • 1/2 cup chopped fresh cilantro


  1. Prepare the ingredients: chop the peppers, onions, garlic, and tomatoes if you are using fresh and set them aside.
  2. Add 1 tablespoon of olive oil to the skillet over medium heat. Add the onions, garlic and peppers and cook them until they begin to turn soft. 
  3. Add the chicken and cook it until it is almost cooked through – you may need to add a little bit of oil if chicken is sticking to the pan.
  4. Stir in 1 tablespoon adobo sauce, 2 tablespoons apple cider vinegar, 1/4 teaspoon corrainder, 1/4 teaspoon cumin and 2 teaspoons oregano.
  5. Next add 1 1/2 cups diced tomatoes, raisins and olives – mix everything together.
  6. Reduce the heat to low and simmer for at least 15 minutes.
  7. Sprinkle the picadillo with the chopped cilantro, simmer for 5 to 10 minutes longer and serve.

Add the pepper, onions, and garlic to pan and cook for a few minutes until they begin to soften

Cook the chicken with the peppers, onions and garlic until chicken is almost cooked through

Stir in the adobo sauce, vinegar, cumin, coriander, oregano and mix well

Add the tomatoes, olives and raisins and reduce the heat and simmer on low for approximately 15 minutes

Stir in the fresh cilantro and simmer for 5 minutes more.


Recipe Variations 

Replace the ground chicken with ground beef or turkey.

Add a quarter pound of Mexican chorizo to the ground chicken while browning it for extra flavor.

Add one cup of diced potatoes at the end of the meat browning for a Cuban style picadillo.

Stir in 1/2 cup capers with the olives and raisins.

For a spicy version, add one diced jalapeno pepper.
