This Tabbouleh salad recipe is light, refreshing and full of vibrant flavors. It’s an easy no-cook cook salad that tastes great all by itself or as a side.

  1. Prepare the bulgur by placing it into a bowl and pour 2 cups boiling water and 1 tablespoon lemon juice over it.  Cover the bowl and allow it to sit for 30 minutes until all of the liquid has been absorbed. OR Prepare the quinoa by placing it into a pan with the 2 cups of water  and 1 tablespoon of lemon juice and cover.  Bring the quinoa to a boil and reduce the heat to low and allow it to cook for about 20 minutes until all of the liquid has been absorbed.
  2. Dice the tomatoes, cucumbers  and slice the onions – place them into a bowl
  3. Chop the fresh herbs and add to the bowl with the vegetables
  4. Mix up the dressing
  5. Once the bulgur or quinoa is ready pour it into the bowl with the vegetables and stir in the dressing.
