Description
A twist on traditional chili that’s made with pork, it’s smoky, spicy, and slightly sweet.

Ingredients
- 1 pound lean ground pork – preferably pasture raised
- 1/2 tablespoon olive or avocado oil
- 1 medium onion – diced
- 2 cloves garlic – minced
- 1 red bell pepper chopped
- 1 jalapeno pepper – chopped (optional)
- 3 cups chopped tomatillos (about 3 to 4)
- 1 1/2 cups chopped tomatoes (2 to 3)
- 2 tablespoons chipotle chili powder
- 2 teaspoons ground cumin
- 3 cups black beans
- or 1 1/2 cups white beans and 1 1/2 cup black beans
- juice of a lime
Instructions
Stove Top
- Heat one half tablespoon oil over medium heat and add the onions and garlic. Cook until they begin to soften.
- Add the ground pork and peppers; continue to cook over medium heat until the pork is cooked through.
- Add the ground cumin, chili powder, diced tomatoes, tomatillos and jalapenos.
- Stir all of the ingredients together, cover, and simmer on low heat for 30 minutes.
- Remove the cover and stir in the beans.
- Simmer on top of the stove uncovered for at least 20 minutes longer.
- Just before serving, add the juice of one lime and sprinkle with fresh cilantro.
Slow Cooker
- Heat one half tablespoon oil over medium heat and add the onions and garlic. Cook until they begin to soften.
- Add the ground pork and peppers; continue to cook over medium heat until the pork is cooked through.
- Transfer the meat and vegetables to a slow cooker and stir in the diced tomatoes, tomatillos, jalapenos, chili powder, and cumin
- Cover the slow cooker and cook on low for at least 4 hours.
- Remove the cover and add the beans; cover and cook for at least 30 minutes longer to heat the beans
- Just before serving add the lime juice and serve.
Pressure Cooker
- Set the pressure cooker to saute and add the oil, garlic, onions and bell peppers – cook until they become translucent – about 5 minutes
- add the pork and cook until browned and cooked through
- stir in the chili powder, cumin, jalapenos, beans, tomatillos and tomatoes.
- cover the pressure cooker and set it to low for 10 minutes.
- once the cycle has completed, quick release the pressure and allow the chili to sit for a few minutes before removing the top.
- Sprinkle with lime juice and serve
- Garnish with grated cheese, cilantro, avocados, Greek yogurt
