Chocolate Dipped Dried Figs with Pistachios

Dried figs are dipped in dark chocolate and pistachios for a simple combination of sweet, salty and crunchy.

Ingredients

  • 3.5 ounces Dark Chocolate or Chocolate Chips
  • 1 tablespoon Coconut Oil
  • 12 Dried Figs Mission or Turkish
  • 1/4 cup Toasted Pistachios Chopped

Instructions

  • Line a cutting board or baking sheet with parchment paper
  • Add about an inch of water to the bottom of a double boiler and bring to a slow boil
  • Break the chocolate bar into pieces and place it into the top of the double boiler.
  • Stir occasionally as the chocolate begins to soften, add the coconut oil and stir until most of the chocolate has melted.
  • Remove from heat, the chocolate will continue to melt. Pour the melted chocolate into a small bowl
  • Use a food processor or sharp knife to chop the pistachios into small pieces and place into a separate small bowl
  • Use the the stem of the fig to dip them one by one into the chocolate and then the pistachios
  • Place them onto the parchment lined board allow the chocolate to harden about an hour
  • Store at room temperature

Notes

Store chocolate covered figs at room temperature for up to a week.
