Ingredients

  • 1 pound boneless chicken breasts
  • 1 onion medium
  • 2 cloves garlic
  • 1 cup chopped red or green bell pepper
  • 1 jalapeno pepper chopped
  • 2 1/2 cups diced tomatoes fresh or [canned]
  • 1 tablespoon [chili powder]
  • 1 teaspoon [ground cumin]
  • 2 cups [black beans]
  • 1 cup corn frozen or fresh

Garnishes:

  • 3 tablespoons chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • avocado slices

Instructions

  • Chop the onion and peppers, crush the garlic
  • Rinse and drain the beans
  • Add all ingredients to a slow cooker and cook on low for 3 to 4 hours until the internal temperature of the chicken reaches 165 degrees f.
  • Add garnishes of choice and serve.

Notes

Store in an airtight container in the refrigerator for up to 5 days.
Reheat on top of the stove or in the microwave.
