Caramelized Onions

Ingredients

  • 2 large onions
  • 1 tablespoon olive oil
  • 1/2 tablespoon unsalted organic butter
  • 1/4 teaspoon sea salt
  • water as needed

Instructions

  • Use a sharp knife to cut off the stem and the root of the onionsĀ 
  • Cut the onions in half from the stem to the root end and remove the skin
  • Place the onion halves on a cutting board cut side down, and cut the onions into slices
  • Heat a skillet over medium-high heat. Once the skillet it add the butter and let it melt, then stir in the olive oil.
  • Add the onions and sprinkle them with sea salt - reduce heat to medium heat.
  • Allow the onions to sit undisturbed for about 5 minutes, then stir them and reduce the heat to medium to low.
  • Continue to cook the onions checking them every 5 minutes or so and giving them a stir each time until they begin to turn brown and have reduced in size. This can take up to 30 to 45 minutes.

Notes

Ingredient Notes:
Yello or sweet onions are the best choice of onions to caramelize. However, you can caramelize any type of onion.
Butter adds a rich buttery flavor to the onions, and can be replaced with all oil for a dairy-free version.
Tip
Frequent stirring and deglazing the pan with water will help to prevent the onions from burning.
Change up the water and use broth or beer to deglaze the skillet
