Ingredients

  • 3 small cucumbers
  • 2 cups fresh blueberries
  • 1 1/2 teaspoons fresh basil chopped
  • 1 1/2 teaspoons fresh mint chopped
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • 1/2 teaspoon honey
  • 3 ounces crumbled feta cheese

Instructions

  • clean, dry and chop the cucumbers into 1/2 to 3/4  inch chunks and place them in a bowl
  • rinse and dry the blueberries and place them into the same bowl with the cucumbers
  • add 1/4 cup crumbled feta cheese
  • chop the herbs (1 1/2 teaspoons of each, basil and mint) and sprinkle them into the salad
  • add the liquid ingredients (2 tablespoons lemon juice, 3 tablespoons olive oil, 1/2 teaspoon honey) into a jar and shake it up OR add them to a small bowl and whisk them together.
  • pour the dressing over the salad ingredients
  • Store the salad in the refrigerator until it's time to serve.

Notes

Substitute the cucumbers one for one with zucchini
Substitute goat cheese for feta crumbles
Cucumber salad with blueberries salad is naturally vegetarian and can easily be made vegan by leaving the cheese off.
