Make the dressing by whisking in a bowl or shaking in a jar 1/2 cup olive oil, 1/4 cup fresh squeezed lemon juice, 1 teaspoon maple syrup , 1 teaspoon Dijon mustard.
Place 2 cups baby arugula, 2 peaches (sliced) 1/4 cup goat cheese , 1/4 cup shelled pistachios in a salad bowl
Pour enough dressing over the salad so that all of the ingredients are coated and serve with extra dressing on the side.
