Ingredients

  • 1/2 cup cornmeal
  • 1/2 cup whole wheat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup buttermilk
  • 1/4 cup butter melted
  • 2 tablespoons maple syrup
  • 1 to 2 tablespoons minced jalapeno peppers
  • 1/2 cup frozen corn

Instructions

  • Prepare: Measure the ingredients and set them aside. Chop the jalapeno pepper, coat a skillet or baking dish with olive oil or parchment paper and preheat the air fryer to 375 degrees f.
  • Place the flour, cornmeal, baking soda, baking powder and salt into a large mixing bow and whisk them together.
  • Whisk the egg, buttermilk, melted butter, and syrup together in a medium bowl until they are combined.
  • Add the wet ingredients to the bowl with the dry ingredients and stir with a wooden spoon or spatula. Once the batter is fairly smooth stir in the minced peppers and corn.
  • Pour the cornbread batter into the prepared baking pan and place it into the preheated air fryer.
  • Air fry for 15 to 20 minutes until the top is golden brown and a toothpick comes out clean when inserted in the middle.

Notes

Serve air fryer cornbread with chili, soup, stew, pulled pork or for breakfast.
Spicy cornbread for more heat add 1/4 teaspoon of cayenne pepper or more to taste.
Cornbread basic leave out the jalapeno peppers and corn for a basic cornbread
Cheddar and onion. add 1/2 cup shredded cheddar cheese and 1/4 cup sliced green onions to the batter before cooking.
Vegan cornbread substitute the egg with a flaxett (1 tablespoon flaxseeds + 3tablespoons water) and the melted butter with olive oil.
Gluten-free cornbread. Replace the wheat flour with a gluten-free flour mix.
