Ingredients

  • 2 avocados that are almost ripe
  • 1/4 cup whole wheat panko
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon ground cumin
  • 1 1/2 teaspoons garlic powder
  • 1/4 teaspoon oregano

Instructions

  • Use a sharp knife to slice the avocado all the way around. Gently twist it and pull it apart.
  • Use a spoon to scoop under the pit to remove it.
  • Scoop out the flesh of the avocado by scooping it out with a spoon.
  • Cut the avocado halves into wedges
  • Mix the panko and spices together in a shallow bowl
  • Dredge each avocado slice in the panko and place them onto the air fryer basket
  • Preheat the air fryer to 400 and bake for 8 minutes until golden brown

  • NOTE: Air-fryers are different, you may need a few minutes more or less to cook depending on your air fryer.

Notes

Refrigerate leftover avocado fries for up to two days.
Reheat them in a 350-degree oven for about 10 minutes.
Variations
Spicy avocado fries - add a teaspoon of chili flakes to the panko mixture
Italian Avocado Fries - add 1 tablespoon or two of shredded parmesan cheese to the breadcrumbs. Leave out the chili powder and ground cumin. Add 1/2 teaspoon of onion powder. Dip in your favorite marinara sauce.
