Ingredients

  • 1 tablespoon olive oil
  • 1/2 pound ground chicken breast
  • 6 ounces pasta uncooked
  • 1 cup diced tomatoes
  • 1/4 cup diced onion
  • 1 1/2 cups fresh spinach packed
  • 3 ounces of cheddar cheese shredded

Instructions

  • Cook 6 ounces pasta uncooked according to the package instructions, and preheat the oven to 350 degrees f.
  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Once the oil is hot add 1/2 pound ground chicken breast and cook until the chicken is cooked through.
  • Reduce the heat to medium and add 1 cup diced tomatoes and 1/4 cup diced onion cook for 3 to 5 minutes until the onions begin to soften.
  • Drain the pasta and add it to the skillet with the cooked chicken mixture.
  • Turn off the heat and stir in 1 1/2 cups fresh spinach chopped and 3 ounces of cheddar cheese. Sprinkle a little more cheese over the top of the casserole.
  • Bake for 10 minutes uncovered until the cheese melts and the casserole is heated through.

Notes

Substitutions:
Ground chicken can be replaced with ground turkey, ground beef, ground pork, or leftover diced chicken or rotisserie chicken.
Fresh diced tomatoes can be replaced with canned diced tomatoes.
Serving suggestions: Serve this casserole with a garden salad or sauteed veggies.
Store leftover chicken casserole in the refrigerator for up to three days in an airtight container.
