Ingredients

  • 3 eggs
  • 1/2 cup rough chopped mushrooms
  • 1/2 cup roughly chopped asparagus about 6 spears
  • 1 tablespoon minced onion
  • 1/4 cup shredded cheddar or swiss cheese
  • 3 tablespoons milk

Instructions

  • Prepare the ingredients: chop the vegetables, shred the cheese and measure the milk. Heat a small ovenproof skillet over medium to high heat
  • Whisk the eggs and milk together in a medium bowl and set them aside.
  • Once the skillet is hot, add the vegetables and cook them until they begin to turn soft. Turn the heat off.
  • Sprinkle the cheese over the top of the vegetables in the skillet, then pour the eggs over.
  • Place the pan into a preheated 375 degree air fryer and cook for 8 to 10 minutes until the top turns golden brown and the center of the frittata is firm.

Notes

Conventional Oven Instructions: Follow the instructions in the recipe card, and instead of placing the frittata pan into an air fryer, place it into a preheated 400 degree F oven and bake until set - about 15 to 20 minutes.
Serve your frittata with a salad, potatoes or bread.
Variations: frittatas are a blank slate, use any combination of cooked or raw vegetables, meat, cheese, herbs and seasonings (see the suggestions above).
For individual portions, place the ingredients into two ramekins.
