Ingredients

  • 1 cup packed fresh basil leaves
  • 1/4 cup of freshly grated parmesan cheese
  • 1/4 cup cashews rough chopped
  • 1/4 cup extra virgin olive oil
  • 2 cloves garlic rough chopped

Instructions

  • Prepare: rinse and dry the basil leaves, rough chop the garlic and cashews, measure the olive oil
  • Place the cashews and cheese into the bowl of a food processor and pulse until the mixture is crumbly.
  • Add the basil leaves and pulse a few more times.
  • Slowly pour in the olive oil with the food processor running.

Notes

To prevent bitter pesto, don't over-process the basil and oil.
