Ingredients

  • 1 tablespoon Olive Oil
  • 4 Eggs
  • 3 Mushrooms
  • 1/4 cup Chopped Broccoli
  • 1/2 cup Shredded Cheese
  • 2 tablespoons Onion chopped
  • 2 tablespoons Bell Pepper Chopped
  • 1 tablespoon Milk

Instructions

  • Prepare the ingredients: rinse and chop the vegetables. Grate the cheese with a cheese grater.
    4 Eggs, 3 Mushrooms, 1/4 cup Chopped Broccoli, 1/2 cup Shredded Cheese, 2 tablespoons Bell Pepper, 2 tablespoons Onion
  • Heat the olive oil in a small skillet. Once it's hot, add the chopped vegetables and cook until they begin to soften. Remove the vegetables from the heat and set them aside.

  • Whisk the eggs together with the milk in a small bowl.

  • Arrange the silicone liners on an air fryer tray or basket. Divide the cooked vegetables evenly and spoon them into each of the silicone egg bite molds.
  • Top the vegetables with shredded cheese and pour the egg mixture on top.

  • Place the basket or tray into a preheated 400-degree f air fryer, and air fry for 8 minutes until they are cooked through and the tops of the egg bites are golden brown.

Notes

 
Egg bites can easily be made in a conventional oven. Follow the recipe instructions in the recipe card. Place the uncooked egg bites into a preheated oven at 400 degrees f. Bake for about 10 minutes or until they are cooked through and golden brown on top.
Store leftover egg bites in the refrigerator for up to 5 days. Reheat in the oven, air fryer or microwave.
