Ingredients

  • 8 ounces portobello mushroom caps or shitake or King Oystyer Mushrooms
  • 1 Tablespoon olive oil
  • 1 teaspoon maple syrup or honey
  • 1/4 teaspoon smoked paprika or 1/2 teaspoon liquid smoke
  • 1/2 teaspoon sea salt

Instructions

  • Clean the mushrooms with a damp cloth and slice them into thin strips with a sharp knife.
  • Preheat the air fryer to 400 degrees f.
  • Whisk the maple syrup and olive oil together.
  • Arrange the mushroom slices in a single layer in the air fryer basket or tray and brush each mushroom with the oil syrup mixture.
  • Sprinkle the mushrooms with sea salt and smoked paprika and place the mushrooms into the preheated air fryer.
  • Air fry the mushroom slices for 10 minutes. Flip them over and air fry until they are crispy - about 2 to 3 minutes longer.

Notes

Substitutions:
Mushrooms- Any meaty mushroom such as cremini, king oyster, or shitake.
Smoked Paprika - Swap with 1/2 teaspoon liquid smoke.
Maple Syrup - Honey
Serve mushroom bacon as you would regular bacon in salads, pasta, sandwiches or enjoy it on its own.
Best when eaten immediately, but can be stored in the refrigerator for one to two days. Place in the air fryer for a few minutes to crisp leftover mushroom bacon up.
Depending on the thickness of slices, this recipe will make 12 to 16 slices.
