Strawberry Crostini with Goat Cheese

Ingredients

  • 16 slices baguette Sliced into 16 - 1 inch slices
  • 12 Strawberries Sliced thin
  • 6 tablespoons Goat Cheese
  • 2-3 sprigs Fresh Mint
  • 1/4 cup Balsamic Vinegar

Instructions

  • Use a serrated knife to slice the baguette into slices that are about 3/4 to one inch thick.
  • Place the slice of bread onto a baking sheet and place them under the broiler for about 2 to 3 minutes on each side until they are crispy and golden brown. Remove them from the oven an let them cool to room temperature.
  • Make the balsamic glaze - place 1/4 cup Balsamic Vinegar into a small saucepan and cook over medium heat until it begins to boil. Reduce to low heat and stir occasionally until it has reduced by about one-quarter and is the consistency of syrup. Remove it from the heat.
  • Arrange the toasted and cooled slices of bread on a flat surface and spread goat cheese on top of each slice. Top with strawberry slices.
  • Drizzle with the balsamic glaze and sprinkle with chopped fresh mint.

Notes

Save time and use pre-toasted baguette slices from your local grocery store or bakery and premade balsamic glaze.
Prepare ingredients a few hours ahead of time!
  • Slice the fresh strawberries and store them in the refrigerator until you are ready to assemble the crostini.
  • Make the glaze ahead of time and store it at room temperature.
  • Chop the fresh mint and store it separately in the refrigerator.
  • Toast the bread up to a day ahead and store it at room temperature.
