Giambotta  (Italian Vegetable Stew)

Giambotta or Ciambotta is an Italian vegetable stew that's made in one pot. It's a great way to use summer's bounty of fresh vegetables.

Ingredients: Eggplant Zucchini Onions Garlic Bell Peppers Tomatoes White Beans Olive Oil  White Wine

Step 1. Cook zucchini, eggplant, onions and garlic on top of the stove.

Step 2. Add bell peppers; cover and simmer until the veggies are soft.

Step 3. Stir in tomatoes, white wine and beans, cover and cook for a few minutes longer.

Serve as a main course or side dish sprinkled with parmesan cheese.
