Ingredients

  • 1 to tablespoons olive oil
  • 2 eggs
  • 1 tablespoon of water or milk.
  • 1 1/2 cups of any combination of vegetables: broccoli florets zucchini, mushrooms, chard, spinach, arugula
  • 1 tablespoon diced onion
  • 1/2 cup black beans
  • 1/8 to 1/4 cup cheddar cheese
  • 1/4 teaspoon oregano
  • 1/2 cup cauliflower rice brown rice or your favorite whole grain.

Instructions

  • 1. Prepare the ingredients: Chop the vegetables, whisk the eggs with milk or water, warm up the cauliflower rice of the whole grains, shred the cheese.
  • 2. Heat one tablespoon olive oil in a skillet and cook the vegetables over medium heat until they are crisp-tender. Remove them from the heat and equally divide them into two bowls.
  • 3. Add the eggs to the skillet and cook them to your preferred texture and add them to the two bowls.
  • 4. Top the eggs with the heated cauliflower rice or whole-grain and then the shredded cheese.
  • 5. Add salsa and any other toppings such as jalapenos, olives, cilantro.

Notes

You can add any combination of your favorite vegetables, choose a mixture of textures or use only one vegetable.
