Rosemary Sourdough Bread

Ingredients

  • 1 1/2 teaspoons of instant yeast
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon sugar
  • 1 3/4 cups whole wheat flour
  • 1 3/4 cups white bread flour
  • 1 cup sourdough starter
  • 3/4 cup lukewarm water
  • 2 tablespoons chopped fresh rosemary
  • 1 clove of crushed garlic mixed with 1/2 tablespoon olive oil

Instructions

Bread Machine

  • Place all of the ingredients into the bowl of the bread machine.
  • Close the bread machine and select the dough cycle.
  • Once the cycle has completed, open up the bread machine, and remove the dough from the machine.
  • Spread some flour on a work surface and gently deflate the dough, form it into a ball and place it on a parchment-lined baking sheet. Cover it with a towel and let it rise for 90 minutes.
  • Pre-heat the oven to 375.
  • Crush the garlic, chop the rosemary and mix it together with the olive oil. Use a pastry brush to brush the mixture over the top of the loaf.
  • Bake for 30 minutes.

Traditional Method

  • Combine all ingredients, except for the rosemary, garlic, and olive oil; mix by hand, mixer, or food processor to make a soft dough. This will take about 20 minutes by hand, 10 minutes in a mixer or food processor
  • Place the dough in a lightly greased bowl and allow to rise for an hour. It will be puffy but may not have doubled ins size
  • Spread some flour on a work surface,  gently deflate the dough and form it into a ball place it on a parchment-lined baking sheet. Cover it with a towel and let it rise for 90 minutes longer. 
  • Pre-heat the oven to 375.
  • Crush the garlic, chop the rosemary and mix it together with the olive oil. Use a pastry brush to brush the mixture over the top of the loaf.
  • Bake for 30 minutes. 

Notes

Instead of adding the garlic and rosemary to the top of the bread, you can add it directly into the dough.
Try roasting the garlic before brushing it on the bread.
