Broccoli Cheddar Air Fryer Potato Skins

It's easy to make potato skins in the air fryer. They turn out extra crispy and delicious every time!

Ingredients

  • 2 baked potatoes
  • 3 ounces of shredded cheddar cheese
  • 3/4 cup steamed broccoli
  • 1 1/2 teaspoons olive oil

Instructions

  • Once the baked potatoes are cool enough to handle, slice them in half and use a spoon to scoop out the potato.
  • Brush each potato skin with olive oil inside and out.
  • Place the potato skins in an air fryer basket or tray and air fry them at 375 degrees for 3 to 5 minutes until they start to turn brown.
  • Remove them from the air fryer, sprinkle with cheese and air fry for 2 minutes longer until the cheese melts.
  • Top the melted cheese with steamed broccoli and a little more cheddar cheese.

Notes

Store leftover potato skins in an airtight container in the refrigerator for up to three days.
Freeze potato skins by allowing the potato shells to reach room temperature after they have been cooked. Place the cooled skins onto a baking sheet and pop them into the freezer. Once they are frozen place them into a food storage bag for up to three months.
Defrost the frozen skins in the refrigerator overnight or cook them immediately in your air fryer oven at 375 or your oven at 400 degrees f
