Shred the zucchini with a box grater over a strainer and press down to release the excess liquid. Remove it from the strainer and place it on a clean towel or paper towel, then pat dry. Save the pressed-out liquid if you want it for broth.
Heat olive oil in a skillet over high heat. Once hot, reduce to medium and cook the onion and garlic until they begin to soften.
Combine the egg, flour, zucchini, onion, and garlic in a large bowl.
Scoop out portions of the mixture and form into 12 patties or fritters. Arrange in a single layer in the air fryer basket or tray.
Spray the fritters with avocado or olive oil and air fry at 400°F for 20 minutes, flipping halfway through.

Quick Sauce Idea: stir together 1/2 cup plain Greek yogurt or sour cream, 1 tablespoon lemon juice, and 2 tablespoons chopped fresh herbs (dill, chives or parsley). Salt to taste or flavor with a small amount of dijon mustard.
