Prepare the ingredients: remove the flesh from the 2 avocados and cut it into cubes. Mince the onions (2 tablespoons minced onion) , chop 1 small tomato, and 1 tablespoon cilantroqueeze 1 tablespoon lime juice from a lime.Preheat the oven to 425 degrees f.
Add the avocado, onion, tomato, cilantro and lime juice to a small mixing bowl, and gently stir to combine.
Lay one of 4 egg roll skins on a work surface and add a few spoonfuls of filling to the center of the wrapper. Fold in the top and bottom, and roll the wrapper up. Continue with the remaining wrappers.
Place the egg rolls on a parchment-lined baking sheet and and spray or brush with avocado oil or olive oil. Place in a preheated 425 oven and bake until golden brown and crispy - 12 to 15 minutes. Serve with lime wedges and salsa.
