Crispy Baked Avocado Egg Rolls – Healthy Appetizer Idea

Avocado egg rolls are a refreshing and flavorful twist on traditional egg rolls. Filled with creamy avocado, zesty lime juice, onions, tomatoes, and cilantro, they’re wrapped in an egg roll wrapper and baked to crispy perfection. This recipe was inspired by one of my favorite Cheesecake Factory appetizers. It’s a healthier version that skips the frying, and they are delicious with every crunchy bite.

STEP 6: Bake until golden and crispy – 12 to 15 minutes.

Helpful Tips
- If you use traditional sized egg roll wrappers and avocados you will need one avocado for two rolls. If the avocados are smaller you might need one more.
- Don’t overfill the wrappers, add just a few tablespoons of the filling to avoid tearing.
How to store leftovers
Store leftover egg rolls in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave.
Recipe variations
Spicy – Add a chopped jalapeno pepper or a pinch of red pepper flakes to the filling for extra heat.
Cheesy – Mix in a handful of cheddar, pepper jack or cotija cheese for extra flavor.
Mediterranean – Swap cilantro and lime for feta cheese, parsley or oregano, and lemon juice.
Add-ins – Add chopped black olives, black beans, corn or bell peppers.
