Easy and delicious baked avocado egg rolls are made with 6 ingredients and ready to enjoy in 25 miniutes!

Avocado egg rolls are a refreshing and flavorful twist on traditional egg rolls. Filled with creamy avocado, zesty lime juice, onions, tomatoes, and cilantro, they’re wrapped in an egg roll wrapper and baked to crispy perfection. This recipe was inspired by one of my favorite Cheesecake Factory appetizers. It’s a healthier version that skips the frying, and they are delicious with every crunchy bite.

  • Egg roll wrappers
  • Avocados
  • Lime juice
  • Onion (red or green)
  • Tomato
  • Cilantro (optional)
  • Avocado oil cooking spray or oil

Prepare the ingredients: Slice the avocado in half with a sharp knife, scoop out the flesh, and roughly chop it. Dice the onions, chop the cilantro and tomatoes, and squeeze fresh lime juice from a lime. Preheat the oven to 425°F.

STEP 1: Add the avocado, onion, tomato, cilantro and lime juice to a small mixing bowl.

STEP 2: Gently combine the ingredients with a wooden spoon.

STEP 3: Lay an egg roll wrapper out flat on a work surface. Spread a few spoonfuls of the filling onto the center of the wrapper.

STEP 4: Fold in the edges of the wrapper and roll it up.

Step 5: egg rolls wrapped and placed on a baking tray ready for the oven.

STEP 5: Arrange the egg rolls onto a parchment-lined baking sheet and spray with avocado oil spray or brush with olive oil

STEP 6: Bake until golden and crispy – 12 to 15 minutes.

Helpful Tips

  • If you use traditional sized egg roll wrappers and avocados you will need one avocado for two rolls. If the avocados are smaller you might need one more.
  • Don’t overfill the wrappers, add just a few tablespoons of the filling to avoid tearing.

Store leftover egg rolls in an airtight container in the refrigerator for up to three days. Reheat in the oven or microwave.

Spicy – Add a chopped jalapeno pepper or a pinch of red pepper flakes to the filling for extra heat.

Cheesy – Mix in a handful of cheddar, pepper jack or cotija cheese for extra flavor.

Mediterranean – Swap cilantro and lime for feta cheese, parsley or oregano, and lemon juice.

Add-ins – Add chopped black olives, black beans, corn or bell peppers.

Can I make these egg rolls ahead of time?

Yes, you can assemble the egg rolls ahead of time and refrigerate them for up to a day before baking them. Make sure you cover the egg rolls tightly with plastic wrap or a damp paper towel to prevent the wrappers from drying out. Remove them from the refrigerator for at least 15 minutes before baking them.

Can I make these egg rolls in an air fryer?

Yes, you can air fry these egg rolls. They are extra crispy and delicious in the air fryer. Follow the instructions on the recipe card to assemble the egg rolls. Place them into a preheated to 425 degrees air fryer and air fry for 10 minutes.

Can I use frozen avocado instead of fresh to make this recipe?

You can, but fresh is best. The texture of frozen avocados is slightly different. Be sure to thoroughly thaw them before using them in the egg rolls.

Baked Avocado Egg Rolls Recipe

Ingredients

  • 2 avocados
  • 4 egg roll skins
  • 2 tablespoons minced onion
  • 1 small tomato plum or roma are best
  • 1 tablespoon lime juice
  • lime wedges for garnish
  • 1 tablespoon cilantro chopped fresh

Instructions

  • Prepare the ingredients: remove the flesh from the 2 avocados and cut it into cubes. Mince the onions (2 tablespoons minced onion) , chop 1 small tomato, and 1 tablespoon cilantroqueeze 1 tablespoon lime juice from a lime.
    Preheat the oven to 425 degrees f.
  • Add the avocado, onion, tomato, cilantro and lime juice to a small mixing bowl, and gently stir to combine.
  • Lay one of 4 egg roll skins on a work surface and add a few spoonfuls of filling to the center of the wrapper. Fold in the top and bottom, and roll the wrapper up. Continue with the remaining wrappers.
  • Place the egg rolls on a parchment-lined baking sheet and and spray or brush with avocado oil or olive oil. Place in a preheated 425 oven and bake until golden brown and crispy – 12 to 15 minutes. Serve with lime wedges and salsa.

Notes

Serving Suggestions:
  • Dipping sauces: Pair these baked egg rolls with salsa, pico de gallo or creamy ranch dressing for dipping.
  • Make it a meal: Serve egg rolls alongside a fresh green salad or a comforting bowl of soup.
