How to make BBQ chicken egg rolls
Prep the Ingredients: Chop the bell pepper and onion, and shred the cooked chicken and cheese. If you’re starting with raw chicken, cook and shred it before assembling the egg rolls. Line a baking sheet with parchment paper and preheat the oven to 375°F (190°C).

STEP 1: Heat a drizzle of oil in a skillet over medium-high heat. Add the chopped peppers and onions and sauté until tender, about 4–5 minutes.

STEP 2: Toss the shredded chicken with your favorite BBQ sauce in a bowl. Add it to the skillet with the vegetables and stir until heated through.

STEP 3: Lay an egg roll wrapper flat. Sprinkle about 1 tablespoon of shredded cheese in the center. Top it with 1 1/2 to 2 tablespoons of the chicken mixture.

STEP 4: Fold in the sides of the wrapper, then roll it up tightly from the bottom. Seal the edges with a little water to keep it closed.

STEP 5: Place the egg rolls seam-side down on a baking sheet lined with parchment. Lightly brush the tops with oil and bake for 15 to 20 minutes or until golden brown and crispy.

- Preheat the oven to 375
- Chop the peppers and onions, shred the cheese and set them aside.
- Heat 1 tablespoon olive oil in a skillet, once it is hot, add the peppers and onions; cook until they become soft and remove them from the heat.
- In a small bowl, toss the Shredded chicken in bbq sauce and it to the pepper and onion mixture in the skillet.
- Lay an egg roll wrapper on a flat surface. Spoon about 1 tablespoon of cheese into the center, then top with the chicken and pepper mixture. Keep the filling away from the edges to make rolling easier.
- Fold in the sides of the wrapper, then roll it up tightly from the bottom, keeping the edges tucked in as you go.
- Place the egg rolls onto a parchment-lined baking sheet and brush them with the remaining olive oil. Place them in the oven and bake until they turn golden and crispy – about 12 to 15 minutes.
