How to make this BBQ chicken egg roll recipe
Prepare the ingredients: chop the pepper and onion, shred or cook the chicken and cheese.
Line a baking sheet with parchment paper and preheat the oven to 375 degrees f.
Step 1. Cook the vegetables
Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the chopped vegetables and cook for a few minutes until they become tender.
Step 2. Add bbq sauce chicken
In a small to medium bowl, toss the chicken in barbecue sauce. Add it to the skillet with the peppers and onions.
Step 3. Assemble the egg rolls
Lay out the egg roll wrapper on a flat surface, and add approximately 1 tablespoon of grated cheese in the center of the egg roll wrapper.
Step 4. Add the chicken
Place approximately 2 tablespoons of the bbq chicken and vegetables on top of the cheese.
Step 5. Roll it up
Fold in the sides and roll the wrapper up from the bottom making sure the edges stay inside the roll. Seal the egg roll wrapper by running your moistened fingers along the edges of the egg roll wrapper.
Step 4. Brush with oil
Place the egg rolls seam side down i a single layer on a baking sheet and brush the egg rolls with the remaining ½ tablespoon oil (you don't need to use it all).
Step 5. Bake
Bake the egg rolls until golden brown and crispy, about 15-20 minutes.
