Air-chilled chicken tends to have better flavor and texture. It isn’t soaked in water like water-chilled chicken which is immersed in cold, and sometimes chlorinated water to lower its temperature after processing. Instead, the chicken circulated through cold purified air.
When selecting chicken in the supermarket, look for labeling on the package that states that it is air chilled. If there is no mention of air chilling, the chicken has likely been water chilled.
Organic vs. conventional
