This is one of our favorite dishes because it’s so versatile and easy to make with an air fryer. You can serve it for dinner with your favorite vegetables, toss it into salads, or serve it between bread for a quick sandwich. It’s one of my go-to recipes for busy days or meal prepping. The best part is that the air fryer keeps it crispy and delicious without all of the work or mess.

Key Takeaways for this recipe

It’s simple and healthier than traditional chicken Milanese! This recipe makes use of simple ingredients with easy to follow steps, and by using an air fryer, you can achieve a crispy texture without the added fat and calories.

Traditional chicken Milanese is a simple Italian dish that is made with a chicken cutlet that’s pounded thin, breaded, and pan-fried until golden brown, it’s deliciously crispy and juicy.

While traditional Chicken Milanese is pan-fried, this air fryer chicken Milanese recipe is made with the same simple ingredients, but with a healthier take. It has the same crispy chicken texture and flavor as the pan-fried version with less work and fewer calories.

Ingredients

  • Boneless chicken cutlets or boneless skinless chicken breasts pounded
  • Egg
  • Flour
  • Bread crumbs
  • Oregano
  • Garlic powder
  • Olive oil cooking spray

Prepare: Set up a dredging station with a beaten egg in a bowl, flour, and bread crumbs. I like to use parchment paper for the crumbs and flour for easy cleanup. You can also use 3 bowls.

If you are using chicken breasts, instead of chicken cutlets, pound or slice them so that they are about 1/4 inch thick.

STEP 1: Pat a chicken cutlet dry with a paper towel and dip it into the flour and turn it around so that it’s coated on all sides.

STEP 2: Once the chicken piece is coated in flour, dip it into the egg mixture; turn it around to make sure it covers the entire piece of chicken.

STEP 3: Next dip the chicken into the breadcrumb mixture. Turn the cutlet over into the crumbs until the entire piece is coated in crumbs.

STEP 2: Place the breaded chicken cutlets in a single layer in an air fryer basket or tray. Preheat the air fryer to 400 degrees f. Once the air fryer is preheated, air fry for 10 minutes.

You can easily make this recipe in the oven if you don’t have an air fryer. Once the chicken cutlets are breaded, spray with olive oil spray, arrange them on a parchment-lined baking sheet and place them into a 400-degree preheated oven. Bake for 8 minutes, flip over and bake until the internal temperature reaches 165 degrees f. about 6 to 8 more minutes.

Here are a few delicious variations to change the flavor.

Parmesan cheese – Add grated Parmesan cheese for extra flavor.

Herb Crusted – In addition to oregano, add parsley, basil and thyme into the breadcrumb mixture.

Spicy- Add a pinch of cayenne pepper or red pepper flakes for a spicy kick.

Serve chicken Milanese with fresh arugula dressed with olive oil and lemon juice, a zesty arugula salad with pistachios or a Greek chopped salad. It also tastes great topped with marina sauce for dipping or on top with fresh mozzarella cheese for a healthy version of chicken parmesan.

This recipe makes great leftovers. Store leftover room-temperature cutlets in an airtight container and refrigerate for up to four days. For longer storage, freeze them in a freezer-safe bag or container for up to three months.

Leftovers can be reheated in an air fryer at 350 degrees f for about 5 to 7 minutes or the ove at 350 for 10 to 12 minutes. Reheating in the microwave is not recommended.

Tips

  • Ensure the chicken has an even thickness for uniform cooking
  • Add a little oil spray to coat the air fryer basket or tray to prevent sticking.
  • Cooking time may vary depending on the air fryer and thickness of the chicken. Use a meat thermometer to check the internal temperature of the chicken, which should be at least 165 degrees f.

What are the best breadcrumbs to use for Chicken Milanese?

You can use any type of breadcrumbs to make chicken Milanese. I prefer to use Panko breadcrumbs in air fryer recipes. They offer a lighter crispier texture. You can also use crushed crackers or cereal for a unique twist, or gluten-free breadcrumbs for gluten-free chicken Milanese.

Can I use chicken thighs instead of chicken breasts?

You can use chicken thighs, but they will have to be sliced or pounded thin. Keep in mind that they will most likely take longer to cook.
