Crispy Air Fryer Chicken Milanese Recipe – Golden and Crispy

Air fryer chicken Milanese lets you enjoy golden, crispy Italian chicken cutlets with the same classic flavor of fried, minus the mess. As a convenient weeknight meal, hot air browns the coating fast, so it stays light. Serve it with arugula and lemon wedges, then use leftovers for easy sandwiches.

  • Simple to make, boneless chicken breast is pounded thin and coated in seasoned breadcrumbs and cooked in an air-fryer for 10 minutes.
  • Make extra and use leftovers in a salad or a sandwich for lunch.

Traditional chicken Milanese is a simple Italian dish made with chicken cutlets that are pounded thin, dredged in flour, dipped in egg, coated in panko breadcrumbs mixed with garlic powder and dried oregano. They are then pan-fried until golden brown. It’s deliciously crispy and juicy. This air fryer version keeps the same crunch and flavor, but it’s lighter and a lot less messy.

  1. Set up a breading station: Place beaten egg in a bowl. Arrange flour and breadcrumbs on parchment paper for easy cleanup, or use three separate bowls if you prefer.
  2. Bread the chicken: Pat each cutlet dry. Dredge in flour, dip into the egg, then coat with breadcrumbs, pressing gently to cover all sides.
  3. Air-Fry: Arrange cutlets in a single layer (cook in batches if needed), then air-fry at 400 degrees for 10 minutes (preheat first) until golden brown and crispy.

  • Season the chicken with salt and pepper before breading for enhanced flavor.
  • Make sure that the chicken has an even thickness for uniform cooking.
  • Add a little oil spray to coat the air fryer basket or tray to prevent sticking.
  • Spray the cutlets and air fryer basket lightly with olive oil spray to improve browning and prevent sticking.
  • Cooking time may vary depending on the air fryer and the thickness of the chicken. Use a meat thermometer to check the internal temperature of the chicken, which should be at least 165 degrees f.

Once you’ve got the base down, it’s easy to change things up. Here are a few simple ways to tweak the flavor.

VariationHow to Change It
Herb Crusted Add up to a 1/4 teaspoon fresh parsley, basil, and thyme, along with oregano for extra flavor
SpicyAdd a pinch of cayenne pepper or red pepper flakes to the breadcrumbs.
Meat Replace chicken with thin pork cutlets

  • Serve chicken Milanese with a simple baby arugula side, toss fresh arugula with olive oil and a squeeze of lemon juice.

Chicken Milanese is also great with:

This recipe is perfect for meal prep because the cutlets hold up well. Let them cool to room temp, then store them in an airtight container. Keep them in the fridge for up to 4 days. If you want to stash them longer, freeze in a freezer-safe bag or container for up to 3 months.

To reheat and keep them crisp, warm leftovers in the air fryer at 350 degrees F for 5 to 7 minutes. You can also use the oven at 350 degrees F for 10 to 12 minutes. Skip the microwave because it makes the coating soft.

What are the best breadcrumbs to use for Chicken Milanese?

Panko breadcrumbs work well because they brown nicely and stay light and crisp. You can also use regular breadcrumbs, crushed crackers, cereal crumbs, or gluten-free breadcrumbs.

Can I use chicken thighs instead of chicken breasts?

You can use chicken thighs, but they will have to be sliced or pounded thin. Keep in mind that they will most likely take longer to cook.

Can I bake chicken Milanese instead of using an air fryer?

Yes. Bake breaded cutlets on a parchment-lined sheet at 400 degrees F for 8 minutes, flip, then bake another 6 to 8 minutes, until the chicken reaches 165 degrees F.

How do I keep breading from getting soggy when reheating?

Reheat in the air fryer at 350 degrees F for 5 to 7 minutes, or in the oven at 350 degrees F for 10 to 12 minutes. Skip the microwave because it softens the coating.
