Instructions

  • Preheat the oven to 375°F. Line two 8-inch cast iron skillets or cake pans with parchment paper (KEEP link).
  • Toss the chopped cranberries with the maple syrup and set aside.
  • In a large bowl, combine both flours, baking soda, baking powder, sugar, salt and orange zest.
  • In a smaller bowl, whisk the egg, buttermilk and yogurt.
  • With a wooden spoon or an electric mixer on low, gradually add the wet ingredients to the dry until a sticky dough forms.
  • Stir in the cranberries and walnuts by hand.
  • Divide the dough into two equal mounds and place one in each pan. Score an X on top if you like.
  • Bake 45 to 50 minutes, until golden brown and a toothpick in the center comes out clean.

Notes

  • No buttermilk? Mix 1 tablespoon lemon juice or vinegar per cup of milk and let it sit 5 minutes.
  • Dried cranberries: skip the maple soak. The bread will be a little sweeter.
  • Want it sweeter? Increase the sugar up to 3 tablespoons.
  • Store wrapped at room temperature up to 3 days, refrigerated up to 5 days, or frozen up to 3 months.
